Halloween Fun - Cakes

I decided to also make some  lovely Halloween cakes, very simple but they looked great and I even got asked to make some more for a halloween party my sister was going to.

Halloween Eyeballs Cupcakes

150g Caster Sugar
150g Stork
175g Self Raising Flour
Vanilla Essence a couple of drops
3 Eggs
Green Gel Colouring

Topping

200g Butter
400g Icing Sugar
2 Table Spoon of warm water
Red Gel Colouring

White Icing
Black Icing
Red Gel Colouring (veins)

Jam

To start with I heating the oven to gas mark 4, and line my cupcake dish with 12 Muffin Size cases.

I always use all in one method with my Cup Cakes, so throw in Caster sugar, Flour, Stork,  Eggs, Colouring and Vanilla Essence, I love Vanilla. I then Mix until all mixture is mixed until smooth but thick.

I then use a piled tablespoon to divide the mixture in to the 12 cases, and put them in the middle of the oven for 15 minutes, check that they are firm to touch, if not try another 2 minutes and try again.

While these are in the oven prepare the 'eyeball', take a pinch of the white ready made icing and roll in to a ball, do this 12 times and put to the side, grab hold of the black ready made Icing and take a very small amount of it and once again roll in to a ball, repeat this 12 times, then place the small black ball on top of the white ball and slightly press in the black piece.  Now grab a thin paint brush and use the cap of the red gel colouring to paint veins onto the eye balls, repeat on all the eyeballs then set aside for later.

We are now gonna make the icing for the top, grab roughly 200g of Butter and whisk until light and fluffy, then add roughly 400g of icing and Mix, until it is all mixed together , this become messy, like a dust storm all over your kitchen and you! If it doesn't look like it is mixing properly throw a teaspoon at a time of warm water.  you can also throw in some vanilla essence if you fancy it, this is the time to put the red colouring in too, add as much as you need in small amounts.

Now the cakes will need to come out the oven and cool down, using a syringe which I got for the pharmacy, pull up some jam with it and insert it into the middle of the cupcakes, this can be done while the cakes are hot. When they have cooled, use a star shaped nozzle and  swirl the icing on top like a flower, but you can do it anyway you like to be honest.
Then last but not least you can now put the eyeball in the middle of the cupcake, there you have it done!!
