Lemon Drizzle Traybake

I fancied giving a Lemon Drizzle cake a go, I had been told that they are very easy to bake so I have given it a go, and hey presto its made......and eaten too.....

This is how I done it........
230g Stork
230g Caster Sugar
280g Self Rasing Flour
4 Lrg Eggs
4 Tbsp Milk
Grated Zest of 3 Lemons 

Glaze

Juice of 3 Lemons
175g Sugar


Preheat the oven to Gas mark 4, and grease and Line 12 x 9in tin

Place Butter, sugar, flour, eggs, milk and zest in a large bowl and mix until the mixture is smooth 

Put the mixture into the tin and spread evenly

Bake in the Preheated oven for 40-45 mins, until lightly browned and springy to touch, always double check that the cake is cooked in the middle.

Make the glaze, by mixing the Juice of the 3 lemons and the sugar, and while the cake is still hot and in the tin pour the glaze over the top of the cake.

Leave to cool.

There you have it, Done!!!

  2. This seriously looks so good, one of my have things is lemon cake and I am very over-due making one so this has given me inspiration to create one this weekend :)
